Down-home Japanese Cookin'
Americans think Japanese food is all sushi. It ain't. I want to take the downhome country styled dishes from the wilds of Kyushu to the US. You get a good deal of fried foods and steamed vegetables, throw in some of those baby octopus for the shock effect. Get some good shochu. Build your restaurant in the wooddy, earthy themes of a typical Japanese izakaya. Which there are izakaya in New York City, but my catch is this, do it in the country! Not too far from a major urban area, then play on the stereotypes and make silly flyers with ninja or sometthing and watch the people flock. Something "new" to eat. People will drive to eat good food. U will also want the whole rack of Japanese knives, there are so many and they are all cool. And Tatami mats for sure.

Nihon no ryouri ga suki. I'll rock up for a nice gohan anytime, hell, I'd probably move to PA for that. I think you should get Shinpei to be the chef but I don't think you could steal him away from Fumiko.
